Overnight oats


One of the great joys of life is fast food that is easy to make and store but most of all healthy. Traditionally when I think of oats I think of my gran cooking them on the stove and them being lumpy and a little dull to eat. I never realised that this was just because of how they are cooked, not how they actually taste.

There is a way of making oats for breakfast that is not only quick but tasty and can be stored safely for at least three days in the fridge. Cutting down on the time it takes you to make breakfast and something you can eat either on your way to class or while you are in class.

It is called overnight oats and a little playing around on Pinterest will give you masses of ideas of various recipes but these are my two favourite versions and even they can be played with.

The basic or the base

What you will need for the basic version:

  • A jar (glass or plastic is fine).
  • Steel cut oats  (Jungle oats blue box)
  • Milk (Works with dairy, rice milk, almond milk and soy milk as well as coconut milk).
  • 1 tsp essence of vanilla

Instructions:

  • Pour 125gms (half a cup) of oats into your jar
  • Add your dairy
  • Add your vanilla
  • After closing the jar give it a good shake
  • Leave at least 6 hours in the fridge or overnight.

More exciting version:

Peanut Butter and Banana

Using the basic recipe, add the following ingredients:

  • 1 ripe banana
  • 1 tablespoon of peanut butter

How to prepare this version

  • Make the basic version of overnight oats, before closing the jar and shaking it.
  • Stir the oats and then add the tablespoon of peanut butter.
  • Give that a good stir.
  • Slice up as much of the banana as you would like to add.
  • If you have a strawberry or two, cut those up and add them too.
  • Close the jar and put into your fridge, overnight.
